WEST AFRICAN FISH STEW
Ingredients:
- Fish (sea bass, croakers, porgies or rock)
- Vegetable oil
- Green bell pepper
- Onion
- 1 can of tomato sauce or tomato paste
- Thyme
- Salt
- Black pepper
Method:
Wash fish and pat dry. Cut up fish for stew. Season fish with salt and black pepper and fry fish with vegetable oil in skillet. Remove fish from skillet and transfer fish to a large or small saucepan (amount you fix).
Saute in skillet onion and green bell pepper. Remove mixture from skillet and add to fish in saucepan. Add tomato sauce or tomato paste and stir. Sprinkle thyme, salt and black pepper to taste. Cover; simmer for about 15 minutes. Serve with rice or potatoes, if desired.
